The salad with a fruity twist

Hallo meine Liebsten


Ich hoffe, ihr seid alle fit, munter und vor allem fleissig dabei, eure Neujahrsvorsätze in die Tat umzusetzen =) Falls einer davon mit gesunder Ernährung zusammenhängen sollte, habe ich heute die passende Unterstützung für euch: Einen leckeren Salat, den ihr entweder als leichtes Mittagsessen oder (fast besser) als Abendessen geniessen könnt.


Die Kombination Salat & Orange finde ich persönlich super lecker und die Orange bietet sich auch als idealer Bestandteil eines mal etwas anderen Dressings an. Die Avocado versorgt euch mit wichtigen (Ja: Wichtig!) und gesunden Fetten und Fenchel soll ja bekanntlich gut sein für die Verdauung ;-)

Ihr braucht für 4 Portionen:

- 1 Salatmischung nach Wahl (Ich habe eine saisonale Mischung gewählt, die Spinat enthält und noch etwas Rucola beigefügt, weil er mir so gut schmeckt. Ihr könnt das aber gerne so handhaben wie ihr es am liebsten mögt.)
- 1/2 Fenchel
- 2 Avocados
- 3 Orangen
- 2 Päckchen Mini-Mozzarellakugeln
- Olivenöl
- Aceto Balsamico dunkel
- Honig

Und so geht's:

1. Den Salat waschen und auf den Tellern verteilen.
2. Den Fenchel in dünne Scheiben schneiden. Ein wenig Wasser zum kochen bringen und den Fenchel für nur 2 Min. beigeben. (Man könnte den Fenchel auch roh beigeben - ich mag das aber nicht so, drum hab ich ihn ein wenig weich gekocht.)
3. Das Fruchtfleisch der Avocado in 1cm Würfel schneiden und mit dem Fenchel auf den Tellern verteilen.
4. Zwei Orangen schälen, filetieren und in Stücke schneiden. Diese nun ebenfalls auf dem Salat verteilen und zum Schluss mit den Mozzarellakugeln garnieren.
5. Für das Dressing benötigt ihr den Saft der dritten Orange und vermischt den zusammen mit 4 EL Olivenöl, 3 EL Aceto Balsamico und 1,5 TL Honig.

I hope everyone is doing great and hopefully you guys are working hard for your new years resolutions =) For those of you who have a fitness-related resolution, I may offer some help with this delicious recipe of mine. You can enjoy this as a light lunch or (even better) as a dinner.
 
 
The combination of salad and orange is what makes this recipe so special and I personally really like it. The orange juice can also be used as an ideal ingredient for the "a little different than usual" dressing. Avocado provides some good and also important  (yes: Important!) healthy fats for you and fennel is known to be good for your digestion ;-)
 
For 4 portions you'll need:
 
- 1 mix of your favourite leafy salad (I chose a winter mix, which contains spinach and added a little rocket, 'cause I like it like this :-P But you can choose what ever you like best)
- 1/2 of a fennel
- 2 avocadoes
- 3 oranges
- 2 packages of mini mozzarella cheeseballs
- Olive oil
- Aceto Balsamico (dark)
- Honey
 
And this is how you prepare it:
 
1. Wash your salad and put it on four plates.
2. Cut up the fennel in really thin slices. Then you can either boil it for about 2mins. or you can leave it just as it is. (Since I don't really like to eat fennel raw, I decided to boil it) Later you're gonna put it on the salad.
3. Cut up the avocado in 1cm pieces and put it on the salad as well.
4. Peel 2 oranges and try to fillet them as good as you possibly can. Cut them into pieces and put it on the salad along with the mozzarella cheese.
5. For the dressing you need to extract the juice from the 3rd orange and mix it with 4 tblsp of olive oil, 3 tblsp of aceto balsamico and 1,5 tsp of honey.
